Hi I found a work around 🙂 If you have Microsoft Word on your Mac you can write what you need in a new Document, go to the toolbar and select Text Highlight Colour. Once you have picked the colour you want copy and paste back into Mac Mail. It doesn't work exactly the same as Word Perfect but it is similar. It is now between the font color and background color. I used the control+M and then I was able to type without the color background in plain black text again and complete what I wanted to do.
