After spending some time configuring a GPO to set the details using the '%UserName%' environment variable, I found that trying to set the User Initials field with a sub string of%UserName% was not supported and so I was going to redo it with a script set in the GPO to run once. So, I then changed the current GPO to remove the keys detailed above, did a gpupdate, keys were deleted, start Outlook and the details were automatically populated correctly with the Full Name and Capitalised initials. I did notice that the keys are not re-created though and could only find the string in the registry once under Distinguished Name. I had to conclude that Outlook was pulling down the display name or possibly the first name and last name field via this Distinguished Name key or getting it from Active Directory. Problem solved.
